Apple Notes Snapshot

Apple Notes Snapshot is the backup control room for Apple Notes on macOS. Keep the upstream `notes-exporter` engine, then add path-aware exports, `launchd` scheduling, visible health checks, and a calmer recovery path when the local backup loop drifts.
